Baked flank steak with 3 cheeses

 Ingredients:

  • 1 piece of diaper (approximately 1.5kg)
  • 2 cloves of garlic, chopped
  • 2 tablespoons of olive oil
  • Salt and black pepper to taste
  • 1 can of beer (350ml)
  • 300g of mini onions
  • 300g pre-cooked potato balls with skin
  • 1/2 cup (tea) of water
  • 1 tablespoon cornstarch
  • 1 tablespoon of butter.

Filling:

  • 1 cup (tea) of Catupiry
  • 1 cup grated provolone cheese
  • 1 cup grated mozzarella cheese
  • 2 tablespoons of chopped green chilli.

Method of preparation:

  1. Open the diaper piece with a knife, forming a blanket.
  2. Season inside and out with garlic, olive oil, salt and pepper.
  3. Mix the filling ingredients, place inside the meat and secure with toothpicks.
  4. Transfer to a mold, pour over the beer,
  5. cover with aluminum foil and bake in a preheated medium oven for 30 minutes.
  6. Remove, arrange the mini onion and potato around and return to the oven for another 30 minutes or until golden.
  7. Remove, reserve the meat and vegetables on a platter and pour the broth from the pan into a pan.
  8. Add the water, cornstarch, butter, salt and cook over medium heat, stirring until it thickens. Disconnect,
  9. drizzle over the meat and serve.
